Peach cobbler.

I picked up a whole bunch of peaches while I was down in Asbury Park a week ago. A delightfully short little produce season I was pretty excited to hear peach season started early this year due to continual heat waves. Since I don't have a microwave at the moment I couldn't make my favorite peach crisp so I decided to go for a cobbler instead. It went a little something like this:

Ingredients:

  • 6-8 peaches
  • 2/3 cup light brown sugar
  • 1/4 cup butter
  • 3/4 cup flour
  • 3/4 cup sugar
  • 3/4 cup milk (I used soy)
  • 2 teaspoons baking powder
  • dash of cinnamon
  • pinch of salt

Steps:

  1. Peel and slice your peaches and mix with light brown sugar and set aside.
  2. In a medium mixing bowl, combine the flour, sugar, baking powder, cinnamon, salt, and milk until on the smooth side.
  3. Preheat the oven to 350 degrees F and put the butter in the bottom of a 9" x 13" baking dish allowing it to melt while the oven warms up.
  4. Add the fruit mixture into the baking dish and distribute evenly.
  5. Pour the batter over the fruit and slide the cobbler in the oven.

Bake for 40-50 minutes or until the cobbler starts to lightly brown and cracks form. Will only keep for a day or two so dish it out warm. Serves plenty.
