Weeknight dinner #6.

nachos

Honestly, I don't really eat dinner all that often in the summer. By the time I get home from the gym or errands, I'm too tired and hot to make anything. Popsicles, snacks, and cold beverages usually suffice. Tonight for some reason I was craving nachos. Nachos are potentially my favorite food. Easy to make, always delicious, and chock full of variety.

Here is my latest version:

  • Tortilla chips (duh)
  • Chicken strips with caramelized onions, garlic, and curry
  • Sauteed spinach
  • Freshly diced tomato
  • Jalapenos
  • Medium salsa (couldn't find any hot!)
  • Sharp white cheddar cheese

With plenty of fixins for another batch or two.
